Peach Glazed Salmon

Ingredients:

8 lyman peaches (peeled and diced)

½ cup cider vinegar

2 tbsp honey

¼ tsp chile flakes

1 red onion diced

6 garlic cloves chopped

1 tsp salt

2 tbsp soy sauce

1 tbsp butter

4 6 oz pieces of salmon

In a medium saucepan on high heat, melt the butter and saute the onions and garlic until they become golden brown. Turned the heat down to low.  Add the remaining ingredients. simmer until the liquid is cooked off and what remains becomes thick.  Remove from the heat and puree until it is smooth.  Allow to cool before using.

Directions for the salmon.

Preheat the oven to 425f.  In an oiled baking pan,  place the salmon evenly spaced on the pan.  Spread glaze evenly over each piece.  Place in the oven and cook for 15-20 minutes.

Remove from the oven and enjoy over steamed rice, fresh salad greens, or sauteed vegetables.

Lyman’s Peach Pecan Pocket

Ingredients:

4 Lyman peaches-sliced in half with pit removed

½ cup brown sugar

1 tsp vanilla extract

¼ tsp salt

¼ tsp nutmeg

½ cup chopped pecans

1 block Lyman’s homemade pie dough

1 whole egg

½ cup granulated sugar

 

 

 

Directions:

Combine the brown sugar, nuts and spices in a small mixing bowl and set aside.  Preheat the oven to 350f.

Roll out the pie dough to ¼ inch thickness. Cut into 6 inch squares.  Place a half peach pit side up on each square.  Fill each pit hole with the pecan sugar mixture.  Wrap the corners of the dough square over the top of each peach.  Whisk the egg and brush egg on each wrapped peach.  Then sprinkle with granulated sugar. Place the peaches on a greased baking sheet. Bake for 30 minutes until golden brown.  Served hot with ice cream.
