Ingredients:
- 1 medium (200 g) apple, cored, unpeeled, and thinly sliced, or substitute ½ cup of unsweetened applesauce
- 3 large (150 g) eggs
- 1 cup (250 g) unflavored Greek yogurt
- ½ teaspoon cinnamon or apple pie spice
- Pinch of salt
- 1½ cups (150 g) quick oats
- ⅓-½ cup toasted nuts or dried fruit (optional)
Directions:
Combine all ingredients in a blender: 1 medium (200 g) apple, cored, unpeeled, and thinly sliced, 3 large (150 g) eggs, 1 cup (250 g) unflavored Greek yogurt, ½ teaspoon cinnamon or apple pie spice, a pinch salt, and 1½ cups (150 g) quick oats. Blend until smooth.
