Black Plum Upside-Down Cake

This moist and buttery cake features caramelized black plums baked right into the top for a beautiful summer dessert that’s as delicious as it is eye-catching. Perfect for brunch, dessert, or enjoying with a cup of coffee.

Ingredients

For the Plum Layer

  • 4–5 black plums, sliced
  • 1/4 cup butter
  • 1/2 cup brown sugar

For the Cake

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 2 tablespoons milk

Directions

  1. Preheat oven to 350°F.
  2. Grease a 9-inch round cake pan.
  3. Melt 1/4 cup butter and pour into the bottom of the pan. Sprinkle brown sugar evenly over the butter.
  4. Arrange sliced black plums in a decorative layer over the brown sugar mixture.
  5. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  6. In a separate bowl, beat softened butter and sugar until light and fluffy.
  7. Add eggs one at a time, then mix in vanilla.
  8. Stir in sour cream and milk.
  9. Gradually add dry ingredients and mix until just combined.
  10. Spread batter evenly over the plum layer.
  11. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  12. Let cool for 10 minutes, then carefully invert onto a serving plate.

Serving Suggestions

  • Serve warm with whipped cream
  • Dust with powdered sugar before serving
  • Pair with coffee or tea for a summer brunch treat
